Summer is in full bloom, friends.  And if you ask me, there is no better way to celebrate than with a fresh, light, refreshing salad.

This Summer Cherry and Prosciutto Salad is one of our favorites these days…the sweet cherries, tart goat cheese and salty, crispy proscuitto make the perfect team.  It makes a wonderful main course and is also great as a side paired with grilled chicken…and use it on company..they’ll think ‘you so fancy’ without having a clue how simple it is to create 😉

Summer Cherry and Prosciutto Salad

Ingredients

For the Vinaigrette

1/3 Cup Olive Oil

3 Tablespoons Red Wine Vinegar

2 Teaspoons Dijon Mustard

1 Teaspoon Honey

1/4 Teaspoon Salt

1/8 Teaspoon Ground Black Pepper

For the Salad:

4 Ounces Thinly Sliced Prosciutto, roughly chopped

8-10 Ounces Mixed Greens

2 Cups Cherries, pitted and halved

1/4 Cup Thinly Sliced Red Onion

4 Ounces Goat Cheese, crumbled

Directions

For the vinaigrette

Place all ingredients in a glass jar with a lid and shake well or whisk together all ingredients in a medium sized bowl until well combined.  Set aside.

For the Salad

Heat a large nonstick skillet over medium high heat.  Add the prosciutto and cook until crisped up, stirring occasionally, about 4 minutes.  Set cooked prosciutto aside.

Place the greens, cherries, red onion, goat cheese and cooked prosciutto in a large bowl.  Add half of the vinaigrette and toss lightly to coat.  Serve with the remaining vinaigrette on the side.  Serves 4 as a main course.

Your salad recipes are an absolute staple at our house. Always a hit. The homemade dressings are always so light and flavorful. Looking forward to trying this new one.
