Fun-tastic Fall Treats

Last year I shared some fun and healthy Halloween snack recipes and this year I have even more autumn and halloween fun to share with you. Healthy, kid approved, kid created and yummy recipes for the win!

Autumn Popcorn Mix

Ingredients:

3 cups Popcorn

1 cup Pretzels

1/4 cup Dried Cranberries

1/2 cup Granola (for homemade I like THIS or THIS recipe best)

1/8 tsp Cinnamon

Add all of the ingredients together in a large bowl and stir well until evenly combined. Store in an airtight container. This makes a fun and easy snack that kids love to help make as much as they love to eat. My girls loved having their own little snack box for family movie night. A great addition to cool, crisp autumn days.

Goopy Green Smoothies

1 cup fresh Spinach, washed

1 RIPE banana

1 Apple, cored and sliced

1/4 -1/2 cup Coconut Water

1/2 cup Ice

Chia Seeds (optional)

Sweet Surfs Organic Gummy Worms (optional)

Add the first five ingredients to a blender and whizz until smooth and creamy. Garnish with chia seed and organic gummy worms if desired. My six year old had the idea for this recipe and both girls drank this smoothie faster than you can say “boo”! Halloween just might be the perfect time to introduce green smoothies. Healthy, yummy and fun.

Pumpkin Slow Cooker Applesauce

Ingredients:

5 Apples, cored and pealed

1 cup Pumpkin Purée

1 RIPE Banana

1/4 tsp Cinnamon

1/4 tsp Nutmeg

Add all of the ingredients to a slow cooker and cover. Cook on high for 3 hours or on low for 6 hours. Allow to cool. Purée till smooth and creamy in a blender or food processor. This is a fun, healthy applesauce that tastes rich and decadent. Store in an airtight container in the fridge  for up to a week.

Haunted Forest

Ingredients:

2 cups Cooked Rice

1 cup fresh Broccoli, cut into small florets

1/4 cup Shredded Cheese

plain Greek Yogurt

¼ cup cooked Black Beans, drained and rinsed

1 tbsp Water

pinch Salt

¼ tsp Lime Juice (optional)

Here is a fun lunch or dinner recipe kids love to help make. Purée the beans, water, salt and lime juice until smooth (in a blender or food processor). Add to a squeeze bottle or plastic baggie. Add warm rice each person’s bowl.  Add broccoli florets to small pieces or paper straws or tooth picks and place in rice like trees in a forest.  Let kids add cheese, yogurt and black bean “food paint” to their forest to make it haunted.

Witch’s Fingers

Pretzel Rods

Sliced Almonds

Chocolate Hazelnut Butter  or Nut or Seed Butter

This recipe is almost as fun to make as it is to eat! Simply dip the ends of the pretzels into the hazelnut, nut or seed butter and stick a sliced almond to it to create the fingernail. Creepy looking but delicious!
