Dr. Seuss Snacks

Dr. Seuss’s Birthday {March 2nd} is a fun day to celebrate with your children. I loved reading the classic books as a child, a joy which I now get to share with my children. Dr. Seuss’s books can show children that reading is fun and important…not to mention many other valuable lessons like “a person’s a person no matter how small” from Horton Hears a Who and “Unless someone like you cares a whole awful lot, nothing is going to get better. It’s not” from The Lorax.

Lately our favorite Dr. Seuss books to read are Green Eggs and Ham, Hop on Pop, The Lorax, Fox in Socks and The Cat in the Hat.  What are your favorite Dr. Seuss books?

Here are two fun recipes to help celebrate.  Healthy and delicious they make a great breakfast or snack.

 

Cat and the Hat Parfait

Ingredients:

1/2 cup Strawberries, hulled

1/2 cup Peaches, frozen

1 tbsp Raw Beet, pealed and chopped or grated

1 cup Oats (I used Gluten-Free)

1 cup Milk of Choice (I used almond)

1 tbsp pure Maple syrup

1 tbsp Nut or Seed Butter (I used Sunflower Butter…Did you know a serving has 8% of your daily iron needs, that’s double peanut butter)

Using a blender purée the strawberries, peaches and beet till well combined and smooth. Store the fruit mixture in the fridge while you make the oat mixture. Rinse out the blender and add the oats. Blend for a few seconds till they become somewhat fine. Add the milk, maple syrup and the nut or seed butter and purée until well combined and creamy. Layer the oat mixture and fruit mixture in a cup {to look like the cat’s hat}. Allow to chill in the fridge for about 5 minutes before serving. Makes about 2-3 small parfaits.

 

Green Eggs and Ham Bites

 Ingredients:

2 cups fresh Spinach

1/2 RIPE Avocado

4 large Eggs

1/4 tsp Nutmeg

1/4 tsp Salt

1/4 tsp Pepper

2- 3 tbsp Bacon {we use turkey bacon} , cooked and broken into pieces.

Preheat oven to 350 degrees (f). Using a blender or food processor purée the spinach and avocado for a few seconds. Add the eggs, nutmeg, salt and pepper and purée until well combined. Pour batter into lined muffin cups. Add some bacon to the top of each muffin and bake for 15-20 minutes. Makes about 8 or 9 muffins. Serve warm.

  1. LOVE it! I knew you would have something wonderful for Dr. Seuss! I share a birthday with the Dr. so it a special day here lol. Our favorites are “Yertle the Turtle” “Horton Hatches the Egg” and “Thidwick the Big Hearted Moose”.

    • I love Oh, the Places You’ll Go! My two year old doesn’t have the patience for it but my five year old loves it. The older I get the more sense it makes:)
