What’s For Dinner? Easy Taco Bar

It’s really hard to find a meal that our entire family will eat. It’s even harder when you’re not the best cook. My remedial culinary skills combined with a lack of time equal a lot of stress when it’s time for the evening meal.

One of the only things I can prepare with ease is this taco recipe. I try to make it fun by allowing the kids to add their own toppings “taco bar” style. It’s fairly quick, it’s flexible, and it’s a great way to sneak some veggies onto the kids’ plates as well.

Easy Taco Bar

Ground beef (I need at least 2-3 pounds to feed my crew)

Red, green & orange peppers

1 Red onion

Taco seasoning (I make my own since the store bought varieties are a little too strong & artificial for my kids’ taste. This is the recipe I use: http://allrecipes.com/recipe/taco-seasoning-i/)

Flour tortillas

Cheese

Plain Greek yogurt (I use this as a substitute for sour cream)

Any other toppings you might want to include: tomatoes, canned chilies, shredded lettuce, chips and salsa, or fresh cilantro. I usually add more ingredients if I have more time.

All you need to do is brown the ground beef, chop the veggies, add them to the beef with the seasoning, and cook until the veggies are soft. Fill the tortillas and add as many toppings as you like. Enjoy!
